You have to respond to all mail today before leaving office (standard). Mail refers to the letters, etc. that are sent to or from people, or the system for sending letters, etc. from place to place.

The ~minute~ of the last meeting has not been sent to me (nonstandard).
The minutes of the last minute have not been sent to me (standard). The written record of a meeting is called minutes (not minute). More fascinatingly, the word attracts a plural verb (not a singular verb).

I think you should get two rolls of ~sellotapes~ (nonstandard).
I think you should get two rolls of ~sellotape~ (nonstandard).
I think you should get two rolls of Sellotape (standard). Sellotape is a brand name for a long, thin strip of sticky and usually transparent material that is sold in a roll and is used for joining together things such as paper or card. Note that the word is both a non-count noun that should not attract an -s and also a proper noun which should start with a capital letter in the sense of being a brand name or a trademark.
